Super Easy Egg Muffin Quiche Hybrids

Two mornings ago I made a Quiche Cups based loosely on this recipe. I was so pleased with the results that this morning I set out to make more quiches, except, I was out of sour cream and cream cheese. I read over a bunch of quiche recipes and compiled my own super easy super lazy recipe that turned into something a little unexpected.



Ingredients
2 eggs
Enough milk so that milk + eggs = 1 cup
Sprinkling of Dry Mustard
Handful of spinach, shredded
Handful of shredded cheese, any kind
Half of the dough from the "dough in a can" thing

Directions
Spray muffin tin and then line each muffin with flattened dough that had been formed into circles.
Mix other ingredients and pour over the top of the dough.
Bake at 375 degrees for aprox. 30 minutes. Let cool before removing.
Makes four muffins.



The Result
Tasty, but not like a quiche. It ended up tasting like an omelet on top of dough. Easy enough to make, I whipped it together and get entirely ready for the day while it was baking.
